Before operating your Pit BOSS 820XL Pellet Grill, please read this manual thoroughly and retain it for future reference. Failure to follow these instructions could result in property damage, bodily injury, or even death.

2. Setup and Initial Burn-In
Proper assembly and initial preparation are crucial for the performance and longevity of your pellet grill.
2.1 Civîn
Unpack all components and ensure all parts are present. Follow the detailed assembly instructions provided in the separate assembly guide. Typically, assembly involves attaching the legs, wheels, hopper, chimney, and side shelves to the main grill body.

2.2 Initial Burn-In (Seasoning)
Before cooking food, perform an initial burn-in to remove any manufacturing oils and prepare the grill for use. This process seasons the internal components.
- Fill the pellet hopper with your desired food-grade wood pellets.
- Plug in the grill and turn it on.
- Set the temperature to 350°F (177°C) and allow the grill to run for at least 45 minutes.
- After 45 minutes, increase the temperature to 450°F (232°C) and run for another 15 minutes.
- Turn off the grill and allow it to cool completely.

3. Operating Your Pellet Grill
Understanding the controls and features will help you achieve optimal cooking results.
3.1 Panela Kontrolê Serview
The digital control board allows you to manage temperature, monitor cooking, and initiate various functions.

The Pit BOSS 820XL offers a wide temperature range from 180°F heta 500°F. Use the temperature dial on the control panel to set your desired cooking temperature. The grill's auger will automatically feed pellets to maintain the set temperature.
3.3 Pellet Management
The pellet hopper has a capacity of 21 lîre. Ensure the hopper always has sufficient pellets during cooking to avoid flame-outs. Monitor pellet levels regularly, especially during long cooks.
3.4 Cooking Modes (8-in-1 Versatility)
Your Pit BOSS 820XL is designed for versatile cooking, offering 8 distinct functions:
- Braise: Slow cooking with moisture.
- Dixan: Low and slow cooking for rich smoky flavor.
- Birajtin: Indirect heat for baking items like bread or casseroles.
- BBQ: Traditional barbecue cooking.
- Sorkirin: Direct heat cooking over the grates.
- Sear: High heat for searing meats and locking in juices.
- Bijartin: Cooking larger cuts of meat with indirect heat.
- Char-Grill: Direct flame grilling for char marks and intense flavor.

3.5 Flame Broiler Adjusting Bar
The grill features a flame broiler adjusting bar, allowing you to switch between indirect heat for smoking/roasting and direct flame access for searing and char-grilling. Slide the bar to expose the flame pot for direct heat.

4. Maintenance û Paqijkirin
Regular maintenance ensures your grill operates efficiently and extends its lifespan.
4.1 Ash and Grease Management
Ash accumulation can affect grill performance. After every few uses, or before long cooks, ensure the ash pot and fire pot are clear of ash. A shop vacuum is highly recommended for efficient ash removal.
Regularly clean the grease tray and grease bucket to prevent grease fires. Dispose of grease properly.
4.2 Paqijkirina şebekeyên pijandinê
The porcelain-coated steel grids should be cleaned after each use. Allow them to cool slightly, then scrape off any food residue with a grill brush. For deeper cleaning, remove the grates and wash with warm, soapy water.

- Pellets Not Feeding: Check for blockages in the auger. Ensure pellets are dry and not clumped together.
